Dinner in 30 minutes or Less!


I don't know what the deal is, but lately both Kris and I have been SO BUSY.

Last week we barely even saw each other until date night, this week we're scheduled to the minute, and it doesn't look like next week is any better.

Long days at work, half marathon training, end of summer bucket list activities to cross off our list... there's just not enough hours in the day!

When life gets hectic like this, it's so easy to decide to skip making dinner and just order out to save time (and dishes). Anything to get a little bit of time back in your day.

The problem here is two fold though: 

1) That's really unhealthy, and 
2) Cooking and eating together as a couple/family is really important to fostering positive relationships! 

So when times are busy I rely on a well stocked freezer filled with pre made meals, and on my favourite recipes which can be cooked in under 30 minutes!


FRESH SHRIMP ROLLS


The prep for this meal is a quick toss of the shrimp in the frying pan (a couple of minutes until they're pink!) and the time it takes to chop up your veggies and roll it all together!

It's a total breeze and is perfect for picnics, appetizers or an easy dinner. You can even make them a day or two in advance and leave them in the fridge to grab and go!

CAJUN FISH TACOS


Much like the above recipe, most of your time for this will be spent chopping up hunks of avocado

The fish only takes about 5 minutes to cook (just coat in the cajun and breadcrumbs and cook on high 2 minutes a side), and the only other thing you need to do is open up the taco packet!


Oh, and did I mention it's FREAKING DELICIOUS! It's good with chicken too but that takes a little bit longer.

SALMON SUSHI PLATE


This meal was inspired by a dinner I had when we were sailing in the British Virgin Islands. I ordered a meal that was essentially spicy tuna and avocado sushi on a plate!


So as soon as I got home I created my own version of the dish. The part that takes the longest is cooking the rice so I recommend putting it on then prepping everything while it cooks. It should all come together in 30 minutes or less for a sushi-inspired meal that lets you mix flavours at whim!


Not bad for a quick meal right?

BROCCOLI BEEF STIRFRY


This DIY-Stir-Fry is perfect for nights when you don't have a lot of time but want something comforting! It's as good as anything you can order off a Chinese takeout menu, but with about half the salt content!

We gave up beef this year for new years so I've been making this meal with thin-sliced chicken instead. Or you can go meatless and just load up with veggies! There's no real way to go wrong with the noodles (which only take 2 minutes to cook) and the easy-to-prep sauce.

SAUSAGE AND PEPPER BISTRO PASTA


The last meal on the list is the one I make the most often: Sausage and pepper bistro pasta.


With sausage meat (uncased) cooking with fresh bell peppers, sliced tomatoes and onions with a bit of red wine and then poured over pasta (I recommend Rotini!) this meal is hearty and always a real crowd pleaser!


Plus it's so colourful with the mixed bell peppers and the sauce tastes SO good when you make it yourself. It's a breeze and I hope it will become one of your favourites like it is in my home!
