Maple Salmon Asparagus Pasta


Sometimes in cooking (as in life) collaboration is the key to success!

You take two good ideas and combine them to make something wonderful. A culinary team that is both surprising and delightful to the palette.


Today I want to talk about a culinary collaboration that came about when a friend of mine had taken leftovers I'd made from the night before and threw them all together in a pan to make the MOST delicious pasta!


I want to talk about Maple Salmon Asparagus Pasta.


The original meal, my BBQ Maple Salmon, along with the prosciutto wrapped asparagus I'd served along side, was cut up along with some other ingredients and simmered to create an incredible pasta sauce!

Taking this idea, I decided to cut to the chase and just make the pasta! And so, my Maple Salmon Asparagus Pasta was born!


Maple Salmon Asparagus Pasta (serves 4)


Ingredients

  • 8 oz. fresh salmon
  • 1/8 cup margarine, melted
  • 1/8 cup pure maple syrup
  • 2 tsp Dijon mustard
  • 1/2 tsp low sodium soy sauce
  • A bundle of asparagus (lets say 4/person, 16)
  • 4 pieces of proscuitto
  • 2 tomatoes
  • 4 green onions
  • 2 tbsp olive oil
  • Salt and Pepper to taste
  • Rotini pasta (enough for 4, about 2.5 cups raw pasta)


Directions


1) Take your salmon, cut off any scales etc. and place in dish. Mix together margarine, syrup, mustard and soy sauce and pour over salmon. Set aside.





2) Snap ends off of your asparagus. Take the prosciutto and wrap around the asparagus to make 4 equal bundles. Take a large frying pan and set stove to high, place bundles of asparagus in frying pan (no oil) and cook until prosciutto starts to crisp and asparagus is cooked. Remove from frying pan and chop into 1" lengths, making sure to chop up the prosciutto as well (though not as diligently).





3) Dice your tomatoes and green onions, set aside with the asparagus and prosciutto.





4) Take your frying pan and set your stove top to medium. Place salmon on the pan and cook until just barely pink in the middle and fish flakes with a fork. Proceed to pull the salmon apart into bite sized pieces while still in the pan.





5) Add your veggies, as well as the Oil and combine over medium heat. Let cook for a few minutes then lower to a simmer.





6) while your sauce simmers, cook your pasta. Once pasta is cooked, combine with sauce and toss over medium heat on stove. Serve with some fresh Parmesan if you've got it!



Voila! A match made in heaven served up on a plate! What more could you ask for?
