It's been somewhat of a hectic week for me (Blogging really took a back seat unfortunately) and I'm quite eager for the weekend to begin!
The weather is starting to turn cold, but the wine will keep me warm! Let's Wine Down this week!
Lately, I've been hearing and reading a lot of hype about zucchini noodles. I love pasta, but I'm also only 25 days away from a beach vacation, so I'm trying to find low-carb, low-fat meals to enjoy. So when my best friend INSISTED I needed a zucchini-noodler, I thought "what the heck" and bought one. on one of those fun nights where I cook just for me, I let my taste buds guide me and came up with this delicious (and healthy) zucchini pasta dish in a homemade bechamel sauce with shrimp and chili peppers. Well done taste buds! This meal was easy to make, light, fresh, delicious and filling. Plus it was tons of fun to use the noodler!
Happy Friday!!! I'm really looking forward to this weekend. Kris is out of town (which I'm not thrilled about) so I've arranged for lots of time with some of my favourite ladies to eat, drink and be merry! While the cat's away, the mice will play! It's been a busy week, full of family, feasting, long car rides and baseball excitement, so I'm pretty excited to Wine Down this week!
The first time I moved away from home, I was 17 and heading off to a dorm room. For the next four years I was back and forth on weekends and during the summers while my costs were largely covered for me. After university, I moved a LOT farther from home... to Scotland in fact, where I spent a summer bar tending, travelling and partying. When it was over, I was back at home for a few years working and saving money. The next time I moved out, I had just turned 25 and bought my first car. I'd been working full time for two years, and decided that it was time to take my first big, financially independent step in this world. I moved out permanently (so far). I'm an organizer. I love to prepare and budget, I'm also fiercely independent and determined. But I was so naive about moving out, I really had no idea what was ahead of me. Here are the things no one told me about when you REALLY move out on your own.
Blogging is really such an unusual hobby to partake in. It can be stressful, rewarding, challenging and provide you with rewards you never suspected. One of the most incredible things about blogging is that you make connections with people all over the world who also share your passion. The blogging support network spans the globe, and is a never ending source of love and encouragement that lets you do you! I recently was nominated by Hollie at Alexie Ricrac for the Sisterhood of the World Bloggers award. Hollie and I connected through a shared blogging Facebook group (#blogpassionproject) and were paired up through a meet-and-greet mail swap! In fact, today I'm putting a care package for her in the mail... Did I mention Hollie lives in Australia?
I love savoury crepes. A sweet delicious crepe with a hearty filling makes for an incredible meal. Recently, I made a few lasagnas for "freeze and reheat" lazy cooking nights. In the aftermath I had a bunch of leftover ricotta, mozzarella and ground beef! What's a girl to do but make manicotti! The problem? I didn't have any manicotti noodles, and didn't really want to go buy them. The solution was simple. Instead of a pasta noodle, I would make crepes and roll my own manicotti delights. An Italian meal with a French twist!

I can hardly believe it's October first! I mean, where did September GO? It's a crisp and cool 14C in the Toronto area today, which means I have transitioned to fall coat weather (which makes me so happy, I love my fall coat!) There's been so many great posts floating around the internet from bloggers about fall date ideas, fall comforts, fall fashion and fall food that have made me so happy this month. More than that, my Pinterest feed is full of decorating tips, and my Instagram is full of gorgeous shots!
