Broccoli Beef Stir Fry


This recipe for Broccoli Beef Stir Fry is a favourite of mine. Easy to prepare, full of flavour and easy to prepare in large quantities; it's the perfect meal for feeding a bunch of people, or setting yourself up for delicious leftovers.


When I was first introduced to this dish, the sauce was out of a packet. Dry spices in water. While it was good, the salt content was through the roof!

Eventually my family found ways to get the same flavour using items found standard in our kitchen, I'm sure the sauce I make is different from how my other family members make it... but they're all along the same theme, and they are ALL delicious!

Enjoy this Chinese inspired meal the next time you're thinking "broccoli". You won't be disappointed!

Broccoli Beef Stir Fry (Serves 6-8)

Ingredients:
  • 1 medium onion, sliced thin
  • 1 cup broccoli (fresh or frozen, I used frozen)
  • 1" square piece fresh ginger, sliced thin or grated
  • 1lb beef (I used nice grilling steak, sliced thin)
  • 2 tbsp vegetable oil
  • 400g Farkay Chow Mein noodles - approx 1 bag
  • 1/4 cup soy sauce
  • 2 tsp sugar
  • 2 tbsp sesame oil
  • 1 tsp sriracha sauce
  • 1/2 cup water
  • 1 tbsp cornstarch dissolved in cold water
Directions:

1) in large pan on the stove over medium heat, add 1 tbsp of your vegetable oil. When heated, add onions and sauté until soft and starting to brown. Now add your broccoli and ginger, cook until flavours meld and vegetables are soft. 

Transfer to a bowl and set aside.



2) Increase heat to medium-high and add second tbsp of vegetable oil to the pan. Add thinly sliced beef to pan and cook until browned. The nice thing about using steak is that you can cook until a "medium rare/medium" rather than drying it out by over cooking.


3) When Beef is cooked, add vegetables back to the pan and toss. Reduce heat to low and allow the flavours to meld without over cooking or burning. 

At this point, put on your noodles to cook and make your sauce.


4) For the sauce, add together soy sauce, sugar, sesame oil, sriracha and water and stir until sugar is all dissolved. You may want to give it a quick taste to see if you want to adjust. Remember that the taste will dilute when spread out over the meat and noodles.

When ready, pour into the frying pan with your meat and veggies. Don't stir yet! Mix together your cornstarch and COLD water mixture, making sure cornstarch is completely dissolved (you need about 4 tbsp water for each tbsp cornstarch)

pour into your frying pan and stir lightly. Increase temperature to medium and stir, letting the sauce mix in and around your meat and veggies.


5) Your noodles should be ready! Strain and then place into a serving bowl. Pour the mixture from the frying pan on top and toss with large spoons! 

Just like that, you're ready to serve this delicious Chinese inspired dish!



Broccoli beef stir fry is great fresh, but it makes for PHENOMENAL leftovers! I don't know what it is, but I always like it best the next day for lunch, so make sure you make yourself extras!
