It's been a busy week and a busier month! Time to wind down with my Friday Wine-Down for the week...
It's a Girl!
As I mentioned a few weeks back, my friend Steph and her husband Eric are having a baby! They hosted a Gender Reveal Party last Friday (which included an awesome game with candy prizes) and told us they'll be welcoming Baby Girl Fuentes in a few months!
Names floating around right now are "Serena" and "Charlotte". Send suggestions if you've got 'em!
Everyone is excited to welcome the new baby girl ... I'm also excited because both Kris and I both won the game so now we have all this candy to eat.
May Meatless Mondays
Recently my diet has been a little all over the place. I used to focus on trying to have one or two meat free days a week, but when I started my FODMAP diet, getting enough protein from lentils and beans became difficult (serious restrictions on amounts). "But Laura!" I hear you saying "Eat Nuts!"... Well I would, but it would kill my boyfriend... so we were back to meat-every-day in the diet.
Now that I've got a bit of a better handle on what I can get away with and am on the mend, I'm reintroducing Meatless Mondays into our home. I figured this would be a good chance to experiment with new recipes, so I'll be trying a "Meatless Monday" post each week. The plan is to commit to the month of May (because I love alliteration) and then go from there.

My Aunt and Cousin were in town (from Calgary and Switzerland respectively) for a day before they went off vacationing somewhere warm.
So clearly the best use of our few hours together was for my cousin and I to get a Coffee and a Pedicure. The best type of bonding time!
With the renovation at Kris' house nearly done (thank goodness...) I've been looking for projects of my own around the apartment and I've got two upcoming:
1) Refinish and stain my wood island in my kitchen
2) TOTAL closet reorganizing!
When I moved into the apartment the big selling factor was my walk in closet. The problem is that it's a total mess of our things and it's a slim space. I'll be working on it for the next little while and then doing a big week long "reorganize your closet" bunch of blog posts. Hopefully by the end of May/early June.
I've got two song obsessions this week. I'm slowly starting to build my Summer Drives playlist (for those 3 hour drives up to "Rock, Bought 'em") and these two are prominently featured:
