Cauliflower Leek Soup


The Days are getting Colder!


As we found out the other day, it could start snowing at any time!

With that in mind, it's time to dust off any "eat to keep warm" recipes you've got in the back of your cupboard.

Time to stop being afraid to turn on the stove, and start making soups and stews again!

The first soup of the season for me was an old favourite, cauliflower leek soup! Easy as pie to make (well, actually easier than pie), incredibly delicious, very filling, very healthy and warms you up right down to your toes! The perfect cold weather soup.

Cauliflower Leek Soup (serves 4)



Ingredients:

  • 2 1/2 cups chicken stock
  • 3 leeks, chopped
  • 1/2 onion, chopped
  • 2 tbsp vegetable oil
  • 1 cop diced cauliflower
  • 1/4 tsp pepper
  • salt to taste
  • 1/2 cup light cream 
  • 1 oz white wine

Directions:

1) Cook onions, cauliflower and leeks in oil on low heat, add chicken stock. Cook 20 to 30 minutes until vegetables are soft





2) Add salt and pepper. Transfer to blender and blend until smooth, return to heat and bring to boil




3) Add cream and wine and adjust seasonings. Stir then serve warm, with additional cracked pepper on top and some nice dipping bread on the side!
