BBQ Maple Salmon

 

It's mid August in Ontario and it's already starting to feel like fall. They're calling it "Augtober"... How depressing!

Here's a little recipe full of great Canadian foods (Salmon, Maple Syrup and BBQ-ing) to help you hold on to the last bit of summer. It's super easy to make and incredibly delicious! It's also fairly healthy as we've swapped the butter out for margarine!

You can also do this meal in the oven if you don't have a barbecue! 



BBQ Maple Salmon

Ingredients:
4 1/4 lb salmon fillets (I actually bought a large salmon steak and cut it up into nice portion sizes)
1/4 cup margarine, melted
1/4 cup pure maple syrup
4tsp Dijon mustard
1tsp low sodium soy sauce

Directions:
1) Place salmon in 8x8 baking dish 
2) Mix sauce ingredients together and pour over salmon
3) Get your barbecue nice and hot, up to 425. Transfer your salmon directly onto the grill (if you don't mind the mess) or onto a piece of tinfoil. Grill for about 12 minutes until salmon flakes with fork
4) Serve hot with extra sauce spooned on top

Your salmon will turn out nice and flaky and completely delicious! I served mine up with a Kale Salad, some grilled prosciutto-wrapped-asparagus (cooked on the top row of the barbecue, right over the salmon so the prosciutto oils dripped down onto the fish... you know.. for deliciousness! Maybe not so healthy though...) and these Garlic Smashed Potatoes
